Colourful cooking!
A fabulous vegetarian meal!
Yesterday, I made this tasty & lovely pasta dish. It tastes fabulous: a bit sweet with the tomatoes & a bit sharp cheesy with the feta that is melting. That creates more of a sauce. The mint also gives it a fresh taste! I used gluten-free corn spaghetti but you could use normal spaghetti. This is super tasty! You should try it out!
Recipe: For 2 persons
Ingredients:
300 gr of gluten-free corn spaghetti
3 cloves of garlic, peeled & finely minced
150 gr of drained sheep’s feta pieces, marinated in oil & herbs ( Keep the marinated oil!!!)
about 5 to 6 tablespoons of this marinated oil
200 gr of fresh young spinach leaves, cleaned, washed & drained
7 gr of fresh mint leaves, cleaned & finely minced
2 tablespoons of a good red wine vinegar
2 large red tomatoes, washed, dept dry on kitchen paper, hulled & cut into wedges
3 medium yellow tomatoes, they are more orange,…I used home-grown, cleaned, hulled & cut into wedges ( I f you don’t have home-grown tomatoes, use another colour then the red tomatoes or other sizes like cherry tomatoes )
Method:
1. Cook the pasta according to the packet instructions.
2. Meanwhile, heat a large non stick pan on medium high heat. Add 2 tablespoons of the reserved marinated oil to the pan. When hot & sizzling, add the garlic pieces. Fry for about 1 to 2 minutes. Add the chopped tomatoes & fry for about 2 to 3 minutes or until the tomatoes begin to soften. Add some Herbamare salt, but not too much. Stir gently. Adjust the heat if necessary. Remove the garlic & tomato mix from the pan to a cooking pot with fitting lid.
3. In the same pan add 3 to 4 tablespoons of the marinated oil & heat up. Add the spinach leaves & let it get nearly wilted. Now, add the drained feta pieces, 2 tablespoons of the red wine vinegar & re-add the garlic & tomato mix. Stir gently around. Taste! It has to taste fab! Now, add the finely minced fresh mint & gently stir it around the pan. If necessary, add some Herbamare, according to your taste! 4. Meanwhile, drain the spaghetti, but keep just a bit of the cooking water. Take your spaghetti plate & fill it with pasta. Top with the veggie & feta mix & enjoy with a loved one! Stir the veggies in & under the spaghetti & eat it like this!! MMMMMMMMMMMMMMMMMM,….a lovely plate of fine food & it is vegetarian too!

This dish looks amazing! Comfort spaghetti at it's best, but not just any spaghetti..corn spaghetti!! I have neither heard of or ever seen it, but now I'm so interested! is the taste sort of 'corny'? lol 🙂 beautiful photos!

Oh Sophie – what a beautiful, healthy and delicious summer pasta dish. Feta – makes me swoon. And then the mint and tomatoes and the marinated oil – and I am not glucose intolerant but do play with the new pastas for health and fun! This is definitely a winner.

Delicious pasta dish, and what pretty yellow tomatoes. I tried growing my own tomatoes (red ones) but they stayed green the whole summer that year. I was a bit disappointed.

I've never seen corn spaghetti around but I use Jerusalem Artichoke spaghetti with is also gluten free. I'll look for corn spaghetti next time. Sounds yummy. And your sauce sounds divine.

We are moving to a new house sometime early next month. As soon as I can I am going to try to at least plant some tomatoes and cucumbers.
One of my sons is allergic to corn but we can do rice noodles. Still have to be careful there b/c some rice noodles contain corn. 🙂
