Cleaning my freezer by using my leftover cranberries & recipes to use them up, with a new one too!

I had a lot of bags of frozen cranberries left in my freezer & I had to use them up to stock new bags in the near future. Cranberry season is very near, here in Belgium! 🙂

Over the few years, I have made a lot of cranberry recipes. So, if you also have a few bags left, you can make these easy to make & tasty cranberry recipes, using  these cranberry bags, from Ocean Spray, from your freezer. Always rinse the cranberries before use, remove the stalks & bad cranberries, even when they are frozen!  I bag = 12 ounces = 340 gr = 3 cups.

1. Chicken with a cranberry, port & orange sauce, served with sugared braised endive (witlof ) with baked potato wedges! Yum! And with home-made cranberry, port & orange sauce!  ( The sauce is Dairy-Free, Vegan, Vegetarian & Gluten-Free too! )

2. Cranberry, pecan & orange muffins ( Are vegetarian )

3. Spiced cranberry & orange relish ( The relish is Vegan, Vegetarian, Dairy-Free & Gluten-Free  too )

Yummy, especially with cold meats, or to fill vegan crepes, to eat in vegan yoghurt or with muesli!

4. Frozen cranberry & cashew smoothies!

Recipe: For about 1400 ml, nearly 6 cups!

Ingredients:

1 heaped cup frozen cranberries, cranberries rinsed under cold water, stalks & bad cranberries removed

2 cups mineral water

1 cup + 1/2 cup soy milk or your favourite plant-based milk ( but not rice milk = too thin! )

1 heaped cup cashews, soaked for at least 2 hours or for 1 night, in the fridge, rinsed & well-leaked

4 tablespoons organic agave syrup

2 teaspoons ground flaxseed

Method:

1. Take your Vitamix container & add in this order: cranberries, 3 tablespoons agave syrup  to begin with, 1 heaped cup of soaked cashews, flaxseed, water & soy milk.

2. Add fitting lid &  tamper too. Mix on high full power until it is completely smooth. Begin with 3 tablespoons of agave syrup. Push the tamper up & down, so that the foods go into the blades. Mix for about 30 seconds to 1 minute or until it is completely smooth. Turn power off. Taste!

3. If it isn’t that sweet, add 1 to 2 tablespoons agave syrup extra. I added 4 tablespoons agave in total! But you must taste the cranberries & the cashews too! 🙂

  1. It’s so hard for us to buy frozen cranberries. I always try to buy them around Christmas time so I can make my own cranberry sauce to have with the turkey but I’m not always successful. Cranberries have only been seen in this country in about the past five years (never fresh, always frozen) but they are VERY hard to find. xx

    1. We only can find them in a short time , near Christmas, in a few large supermarkets.
      We only can find Ocean Spray & it is pretty expensive here! They are here only for about 1 month to 2 months max. & that’s why I buy them in 10 packagas at a time to put in my freezer for the whole year. Last year, I bought 20 pacakages & used them up in all of my cranberry recipes, shown here & in experiments too! 😉 xxx
      I always make my own home-made cranberry sauce & cranbbery jam too!

  2. I love cranberries – I was once lucky enough to go to a cranberry bog in New England that looked like a red lake when they harvested – beautiful. Love the idea of a frozen cranberry smoothie!

  4. Sophie – your cranberry smoothie sounds delicious! We are pretty lucky in Canada – I get the same brand fresh. And throughout the year we can also buy them frozen.

    1. No, just plain mineral water. the air bubbles that you see into the smoothies, is coming from my Vitamix machine that processes it all on super powerful speed! That’s what you see!

      1. Ah 🙂 I see, usually when people refer to mineral water in the states, they are referring to the sparkly variety. I thought that would be strange. Just checking 🙂

  8. We get fresh cranberries around Thanksgiving and Christmas. May be we have frozen ones too, should check next time i visit the supermarket.
    You sure made a lot of recipes with your cranberries.

    1. We can’t buy them frozen, I just freeze my bags, just like that. they will keep in my freezer for up to 1 year! Really good cranberries!

  12. Cranberries are not very common here, and as such I never really liked them. Last year, I spent a fair bit of time in North America and grew to love them….they are in everything! Those muffins look fantastic!

  13. So many fantastic recipes (as always!). I love the idea of the muffins especially, I think I may have to experiment with a bit of veganisation so that I can tuck in too!

    1. I think it is easy. You can use 2 flax eggs instead of the eggs & use plant-based milk instead of the milk and voila! All veganized !

    1. Yes, you can , you just ahve to cook the sauce a bit longer & add a few splashes of red port extra!

    1. No, we also can’t buy frozen cranberries! I forgot to mention that! I can only buy them fresh but directly put them just like that in my freezer! They keep well for more than 1 yaer! Yes!
