A harvest update!

These past few weeks, we are still harvesting many veggies from our garden. Let’s see what we harvested, shall we?

3 lovely aubergines

What else?

The 1st long yellow beans, 500 gr!

And this morning, I collected the 1st long green beans: 450 gr!

And we got this lovely harvest, a few days ago:

3 lovely smaller yellow courgettes, 1 bigger Summer leek, some cut away Asian lettuce leaves, some white chard & 2 Chioggia beets! We mostly peel them, cut them into wedges & roast them int the hot oven seasoned with black pepper, a fruity olive oil, some black pepper & some sea salt. Mingled with clean hands & put into the hot oven for aboutΒ 30 minutes on 200Β°C. Yummy! The interior is lovely white & pink multicolored & these beets are a bit more sweet too. Just look,…lovely, hey?

We also stir fry the leaves & stalks! πŸ™‚ Very yum!

And we look again to the beautiful interior of these special more sweet-like beets! πŸ˜‰

Cool right?

Tomorrow, I will give you a lovely recipe where I roast these beauties in the hot oven & make a lovely vegan dinner with them & with black kale too. πŸ˜‰

  1. Hello Sophie,

    How colourful are your vegetables!
After your harvest you can make a variety of gorgeous dishes. Enjoy cooking!

    1. We grow them in our plastic conservatory, with the doors closed! πŸ™‚ We only have 2 plants that are still growing a lot of flowers & aubergines! πŸ™‚

  2. love the looks of those beets…sooo cool! I really need to plant those next year !! And don’t you just love homegrown eggplant? they taste so much better than the store bought ones!

  3. The beets are very pretty. That’s a lovely update. The variety coming from your patch is incredible. The beans both yellow and green look very good xx

  4. What an abundance of fresh veggies from the garden! Yum yum yummmm!

  5. Oh, I so envy your garden! We didn’t have time to do a garden this summer. I moved in with my boyfriend and we worked on cleaning out the yard and planting flowers. You’ve inspired me to do more next year. πŸ™‚
