Grilled green asparagus with oven baked potatoes & oven baked salmon

Last night, I made this stunning & tasty dinner. I already can buy good quality green asparagus Β & they aren’t too expensive but the lovely white asparagus are still too expensive over here in Belgium. So, I made this tasty dinner. I wanted a no – fuss dinner: easy does it this time! I grilled green asparagus on a hot griddle pan & then drizzled some good fruity extra virgin olive oil on them & some sprinkles of Maldon sea salt flakes: that tasted divine! πŸ™‚

A tasty & easy dinner to prepare!

Recipe: for 2 persons


** For the green grilled asparagus:

1 bunch ( 400 gr ) of bright green asparagus, not too thick! You need to break off the hardest part of the end of the asparagus. This is about 1 to 1.5 cm. Then, you need to peel them from the bottom nearly to the top. You only need to peel them if your asparagus are thick. But I always peel them.

1 bunch, ( 110 gr ) of very small, thinner green asparagus, also peeled with a vegetable peeler.

** For the baked salmon:

2 pieces of a good salmon, each about 220 gr, cleaned & pad dry on kitchen paper

a good brand of a green fish herbs mix / I used from Piet Huysentruyt/ He is a Flemish well-known chef!

some olive oil

** For the oven baked potatoes:

600 gr of peeled, cooked & cooled off potato wedges/ I buy mine from the Delhaize.

1. First, preheat your oven to 200 Β°C, ( 392 F ), using a fan oven, for about 10 minutes. Adjust your oven to the right temperature.

2. Prepare your potatoes. Take a large oven dish & lay your cooked potato wedges in 1 layer in it. Pour over 3 to 4 tablespoons of a fruity extra virgin olive oil & some cracks of black pepper, finely milled. Add some sea salt flakes & with clean hands mingle everything together so that the potato wedges are all covered with oil & seasoning. wash your hands.

3. Prepare your salmon. Take a fitting oven dish & smear it with olive oil. Place your 2 fish fillets besides each other in the dish. Season the top of each fish fillet generously with your green fish herbs seasoning & add some cracks of finely black pepper & some sea salt too. See picture here:

4. Place the fish dish & the potato dish into the hot oven & bake the potatoes for about 30 to 45 minutes until golden & truly appetizing looking! After 20 minutes of baking, turn the potato wedges over onto the other side Β to prevent burning & to equally make them golden in colour. The fish dish goes into the oven for about 15 to 25Β minutes. Check with a thin pin after 15 minutes. You just want the fish to cook through but not to overcook it. When these 2 dishes are ready, turn the oven off. Keep warm.

5. Just when you only need 10 minutes of cooking left in the oven, heat a large griddle pan on a hot fire. Let it get really hot. When super hot, place the peeled asparagus in 1 layer, each one besides each other onto the hot griddle. Grill for about 4 to 6 minutes on one side & a few minutes onto the other. The thinner ones, don’t need so many minutes. When you see the nice black lines on one side, you can cook the other side. Test with a fork to see if they are tender & ready.

Yummy & tasty grilled green asparagus!

When they are done, place them all besides each other onto a serving plate & drizzle a bit of the fruity extra virgin olive oil over them & add some sprinkles of Maldon sea salt over them. Serve with the baked potatoes & the oven baked salmon. Serve at once & enjoy this tasty dinner.

  1. I’m sure the asparagus and the salmon went very well together. I love asparagus and try to have it as much as possible when it’s in season. I’ve never peeled it though. I think cooking it on a char-grill is a great way to cook it xx

  3. Looks like a great meal to me. We used to have an asparagus garden and it was so nice picking your own when they came up in the spring, especially the little tender ones.     My son made something like this recently.
    I’ve been off red meat since Dec 2011 and (although the rest of the family still eat them) I have recently stopped eating chicken and turkey so I look forward to your future fish dishes to give me additional ideas. πŸ˜‰
