I had a lovely fine mix of colourful mini tomatoes & wanted to make a breakfast out of it.
So, I made this with other yummy ingredients.
Recipe: For 1 person with a lot of hunger or for 2 persons
2 organic eggs, beaten
a mix of 9 to 10 colourful mini tomatoes
1 medium red onion, peeled & finely cut up
1/2 red sweet paprika, washed, cleaned & white seeds & white parts removed, cut up into little chunks
a few sprigs of fresh oregano, washed, cleaned & tougher stalks removed
gluten-free Alpro soya baking margarine
finely grinned black pepper
1. Heat a large non stick pan on medium high heat.
2. When hot, add 3 to 4 tablespoons of the baking margarine & let it melt. When sizzling, add the chopped up onion & chopped up red sweet paprika. Stir. Add 1/2 of the oregano & stir. After a few minutes, add the cut up tomatoes. Add the rest of the oregano. Fry for another 2 minutes. Now, add the beaten eggs & swirl them around the surface of the pan.
