Smoked duck, asparagus & fig salad

This recipe is from Jo Pratt’s book : In the mood for food!
This is a lovely & sexy salad. This is best eaten with your other half.
Recipe: For 2 persons
1 orange
1 tablespoon of olive oil
Maldon sea salt
Black pepper
10 to 12 asparagus/ I use the white ones, but you could use the green ones, peeled & cleaned
100 gr. smoked duck, sliced. You can buy it in season at the GB, Delhaize,etc.
2 ripe figs, cut into wedges
some green young salad leaves/ I use a mix from a bag
1 teaspoon of cranberry sauce. I use my home-made cranberry sauce.

1. Cut the top & bottom of the orange. Over a bowl, cut the peel & white parts away & cut up in wedges. Cut away the seeds. Take the juice from the orange. Squeeze any juice of the remaining part of the orange. Put the juices together.
2. In a jam pot, mix the cranberry sauce, olive oil & 1 tablespoon of the saved juice of the orange. Season with sea salt & black pepper.
Put the lid on & shake to mingle the ingredients together. This will be the dressing for the salad!
3. Take a large cooking pot & fill with hot water. Turn the heat on high. When the water is boiling, place the asparagus in the hot water & boil until tender. Drain. Turn the heat off. Keep warm.
4. Take your 2 serving plates & plate up:
First you place the salad leaves over the 2 plates, not too much, dough!
Then you place 4 wedges of fresh fig on the plates.
Then you place the asparagus nicely on the plate ( about 5 per plate )
You place the orange segments on the plates ( about 5 per plate )
And finally, you place the smoked duck strips on the plates
When that is all done, shake your dressing again & with the help of a teaspoon, spoon the dressing over the salad!
Enjoy it with a handsome husband & a good glass of Champagne Brut or Cava Brut!
