This evening, I made these tasty easy to make banana desserts. I made it in my beloved Vitamix, of course! πŸ˜‰ You can taste the banana, the cinnamon & the almond flavour!:)

Recipe: For 3 smaller tasty desserts

Ingredients:

2 very ripe bananas, peeled & cut up into smaller pieces

1 pitted date, cut up

1 cup of home-madeΒ unsweetened almond milk,

1 teaspoon of ground cinnamon

1 teaspoon of home-made vanilla extract, Use GF vanilla extract to make it completely GF! πŸ™‚

2 tablespoons tapioca starch

4 tablespoonsΒ almond flakes

To serve: 1/2 teaspoon ofΒ almond flakes, per dessert, for on top!

Method:

1. Place all your ingredients in this order into your Vitamix & blend on high & on full-speed until fully joined. This will take only 15 to 30 seconds max! Turn all power off & taste. Pour your desserts into fitted see through glasses & top the surface of each dessert, with 1/2 teaspoon flaked almonds & set in the fridge to cool down & stiff up a bit, for at least 3 hours! This will be a pudding consistency, a bit more runny & creamy! πŸ˜‰

  3. How perfect. It’ll take care of the sweet tooth but based on the recipe and ingredients it’s also totally healthy. Looks yummy and so creamy. Hopefully a blender will do as I do not have a vitamix

  4. Here’s a avocado-based chocolate pudding made with bananas. It tastes just like chocolate pudding but it’s completely vegan:

    Chocolate Avocado Banana Pudding [serves 2-4]
     2 avocados, ripe
     2 medium bananas, ripe
     6-8T unsweetened cocoa powder
     1t vanilla extract
     1t cinnamon
     1.5 scoops Raw protein powder [opt]
    1. In a food processor, combine the avocado + banana and process until smooth. Scrape down the sides of bowl as necessary.
    2. Add the cocoa powder, vanilla, cinnamon, and protein powder [if using]. Process again until smooth.
    3. Refrigerate until ready to serve and add any topping you like.
    4. Store in a sealed container and eat within 2-3 days.
    notes: This has the consistency of a thick pudding, but is not similar to chocolate pudding from a box. If you want a thinner consistency, add your favorite soy milk, starting with 1T at a time. Do not use frozen bananas. The riper the banana, the sweeter and stronger the flavor will be. Your avocados should be slightly soft to the touch but not mushy, hard, or watery when cut. If you don’t like banana, feel free to sub in a squash puree [drained of excess liquid]. Add honey or maple syrup if desired. An immersion blender should also work for this.

  6. I am now eying the slightly over ripe bananas in the fruit bowl.. I have almost all the ingredients, only I have hazelnut milk and not almond milk..still worth a try!

  7. A perfectly sweet and simple, creamy and refreshing treat! It sounds delightful, especially because I actually have all the ingredients and equipment to easily make it over here.

  8. Banana and cinnamon is such a lovely combination. These look like a yummy, easy, healthy dessert!! I don’t know if I would have the patience to let them set!! Hahaha
