Yesterday, I made this quick & tasty dinner. I made this with foods from my pantry & fridge.
My husband Peter & I loved it so much that we are going to make it again soon,…!!!
Recipe: For 2 persons, with seconds
Ingredients:
350 gr gluten-free , egg-free spaghetti or normal spaghetti / I used Shärs, this one!
3 fat cloves of garlic, peeled & finely diced
600 gr young spinach leaves, washed, cleaned, spun dry & big stalks removed
200 gr gluten-free & dairy-free smoked bacon pieces
1/2 teaspoon of a good garlic powder
about 250 to 300 ml of cooking water of the spaghetti
a fruity EVOO
To serve: grated Parmesan cheese
Method:
1. Cook your pasta according to your packet instructions but add 1/2 teaspoon of garlic powder to the boiling water. Stir. When the spaghetti is al dente, drain well but keep some of the cooking water for later use. I reserved about 300 ml. Keep warm. Add some of the hot boiled cooking water, bit by bit just that you end up with a non-sticking pasta & that the cooking water will create a bit of a sauce when you add the other ingredients later.
2. At the same time, take a large non-stick frying pan & add 1 to 2 tablespoons of oil. Swirl. Heat up, on medium high. When hot & sizzling, add the cut up garlic pieces. Fry for about 2 to 3 minutes. Now, add the smoked bacon pieces & fry for about 5 to 10 minutes until the bacon is crisp, golden & cooked through. Stir often & do not let the garlic burn! Adjust the heat if you need to. Place a fitting lid on & keep warm.
3. At the same time, take a large cooking pot & pour 1 tablespoon of the fruity EVOO in it. Heat up on high. When hot, add the spinach leaves, add 1 or 2 tablespoons of water & let the spinach wilt. Place the lid on & check it regularly. Add some black pepper & some Maldon sea salt. Taste! It has to taste fab! Add the spinach to the pan with the bacon & fried garlic. Stir well.
Take your pasta pot & check the liquid in it. Toss the spaghetti round & add the wilted spinach, the bacon & garlic pieces. Taste! It has to taste fab! You must taste the smoked bacon , the seasoned spinach, the garlic in the pot & in the spaghetti. Add the spinach , bacon mix to the pot of spaghetti & mix carefully. Spoon onto 2 serving plates. It is so tasty on its own but when you add some grated Parmesan cheese over your plate, you will end up with a bit of a cheese sauce. Yum, I say!
